This Carezza, proposed by Medici Ermete, in fact, is the right bottle to discover a new world. Made of high quality Lambrusco wines, elaborated with the Metodo Classico technique, i.e. with second refermentation, the so-called "presa di spuma" and the subsequent refinement in the bottle. Like a Franciacorta or Champagne. Carezza is aged on its lees in the bottle for almost two years, acquiring an intense pink colour over time, with a rather fine and persistent perlage. The long process, however, does not deprive it of its fresh and joyful soul that emerges clearly from the very first moment, thanks to a delicate scent, with notes of strawberry, raspberry and red fruit. The mouthfeel does not disappoint. It is a dry and fruity wine, with a pleasant natural freshness that makes it easy (too easy) to drink. For those who love to surprise themselves with unique wines that are difficult to imitate, this Phermento is - no apology - the right bottle to choose. Let's start with the simple things. Phermento by Medici Ermete is a dry Lambrusco di Sorbara DOC. But don't expect the classic "lambruschino" all colour and little value. This, in fact, is a particular Lambrusco produced with the technique of refermentation in the bottle. And it's pink. So careful rose' vinification of Lambrusco di Sorbara grapes and presa di spuma in the bottle, without foreseeing the final disgorgement. The yeasts used for the sparkling process remain in the bottle and continue to work, slowly, until the moment of uncorking. It is no coincidence that this bottle is not closed with the classic mushroom-shaped cork, but with a crown cap that gives it an extra seal. It is certainly not a wine destined for long cellar aging but, having said that, if we buy more than one bottle, every time we decide to uncork it we will discover a slightly different wine.
