When the expert hands of the Dom Pérignon vintners harvested the grapes that would become this wine, many of the people who are now old enough to drink it were still in kindergarten. This is because Dom Pérignon P2, or rather, Plénitude 2, represents the second life of the world's most famous Champagne. A second life that begins after almost 20 years of resting in the cellar. Indeed, since the creation of each Millesimato, a certain number of bottles of Dom Pérignon are kept aside for a longer maturation period. Thanks to this additional waiting time, the activity inside the bottles intensifies and the yeasts transmit new energy to the wine. 2006 was a vintage marked by contrasting weather, characterised by a hot and dry July, followed by an unusually cool and wet August. September brought back almost summer-like conditions, which dried out the botrytis spots and allowed the grapes to reach above-average ripeness. Harvest began on 11 September and continued for almost three weeks. On the nose, there is a remarkable, enveloping softness, with floral and mineral nuances that open onto notes of vineyard peach, cedar, calisson and mocha. On the palate, the wine is elegant and full, with a complexity that gradually grows, enriched by a subtle saltiness and ending with a refined and ripe bitterness, enriched by notes of dried fruit, cocoa and roasted hazelnuts.

Then, fruit is quickly joined by powdery notes of iris and violet, and finally, greener hues emerge, evoking privet, angelica, and camphor leaf. In the mouth, it is fleshy and silky. The acidic texture, a distinctive element of the Millesimato, wraps itself around the structure of the Pinot, revealing the heart of the wine. The finish asserts itself and persists in a scent of peony and white pepper. In the name of the purest pleasure, this incredible rosé can certainly also be offered on its own. But, for those who really don't want to give anything up, this Champagne is perfect when paired with important dishes, shellfish, for example, or with saucy white meat dishes.

After a regular vegetative development and a mild August, the dry heat of the last weeks before the harvest shaped the character of this vintage. The harvest, which began on 24 September, produced healthy, ripe grapes, resulting in a wine with a precise and established minerality. In its "Second Life," the P2 2004 reveals a discreet but defined fruitiness, with notes of pink grapefruit, blood orange and fig, evolving towards a bouquet of cocoa, mocha, brioche and honey, thanks to further ageing on the lees. On the palate, the wine plays between tension and lightness, with a tactile and chiselled precision, closing on a persistent liquorice note.
