Sforzato di Valtellina Sfursat Carlo Negri is one of the jewels in the crown of the Nino Negri winery in Sondrio. Like all the red wines produced in this fortunate corner of Italy, Carlo Negri is the result of the skilful processing of pure Nebbiolo grapes, locally called Chiavennasca. Compared to simpler wines, this Sforzato is the result of a harvest that lasts several weeks. The best-exposed vineyards are passed over and over several times in order to pick only the best bunches, those that have reached an ideal level of ripeness. This wine can be said to be produced thanks to the natural drying of the grapes, favoured by the cool, dry Alpine winds. Obviously, this extra effort pays off when the wine is poured into the glass. Observing the glass reveals a wine characterised by a beautiful intense garnet red colour, rich and concentrated. The nose reveals a particularly complex bouquet, with hints of spices, such as cloves, cinnamon and pepper, which envelop and complement a base of black fruit, such as plums, blackberries and raspberries, now transformed into jam. In the mouth, however, it is a dry, dry and austere wine. Long, if not very long, on the finish, with notes of toasted hazelnuts, tobacco and liquorice. It is difficult to find the right match for such an important wine. Roast meats and mature cheeses are perfect. But one does not regret sipping it slowly, after dinner, on its own or with a sliver of bitter chocolate.

Legend has it that in Valtellina, as far back as the late 17th century, the vineyards were guarded by guardians all year round to prevent any ill-intentioned parties from damaging them by stealing the valuable ripening grapes. The word 'Tense' really means protected and was chosen by Nino Negri to name one of his most pleasant Valtellina Superiore appellation wines. In this case, the grapes come exclusively from the Sassella area, rich in stones and ancient rocks. The grapes, as per the regulations, are 100% Chiavennasca. It is harvested only when perfectly ripe and vinified in steel to preserve all the best aromas. This is followed by at least two years of maturation, at least one of which in wood. In the glass it has a beautiful bright ruby colour. The bouquet is complex, with notes of raspberry and with hints of rose and violet, sweet spices and a slight aroma of orange peel and candied fruit. In the mouth it reveals a nice full body and ripe tannins in fine evidence. With great volume, it expresses a pleasant background of red fruit and sweet spices with a persistent finish. On the table it goes well with roast red meats, lamb, kid, game and mature cheeses.

Valtellina is a magical place. An Alpine valley from which come some of Italy's most appreciated red wines. Like this Valtellina Superiore Mazèr, produced by Nino Negri, a historic Valtellina company located in the province of Sondrio. The starting grapes are Nebbiolo, which here take the name Chiavennasca. The harvest is conducted strictly by hand, since the vineyards, small terraced plots, are too small to be worked by mechanical means. The result of a careful study of the territory and the 'savoirfaire' of the Nino Negri winery, the batches of grapes are selected from the different areas of the valley to obtain a wine of great balance. A small part of the Nebbiolo at harvest time is dried for a few days: the grapes are concentrated and the resulting wine is added later to the rest of the mass. A care that is amply repaid when the first glass is poured. Garnet red to the eye, this Valtellina Superiore has pleasantly spicy aromas with notes of cloves, liquorice and chocolate. In the mouth it is dry and austere, pleasantly tannic and above all very persistent. A wine to be paired with strong-flavoured dishes, perhaps game-based, or with well-aged cheeses. Also excellent with a flake of Bitto, to savour a typical product of the same territory.

It is called Quadrio and is a Valtellina DOCG Grumello, proposed by Nino Negri. It is born on the slopes of the Rhaetian Alps, along the right bank of the river Adda, in Valtellina, in Chiuro, province of Sondrio. This wine-growing area is characterised by steep terraces extending between 300 and 550 metres above sea level, with optimal exposures to the south-east, south and south-west. The climate here is particularly favourable for viticulture, thanks to the significant temperature fluctuations between day and night, which allow the grapes to ripen slowly and gradually. Quadrio is the result of the combination of two grape varieties: Nebbiolo, known locally as Chiavennasca, and Merlot. The former represents the austere and structured component of the wine. It is renowned for its ability to produce long-lived, complex wines with robust tannins and high acidity. Merlot, for its part, adds softness and an international touch, with sweet fruity notes and velvety tannins that balance the austerity of the Nebbiolo, creating a harmonious and easy-drinking wine. The grapes are harvested by hand in October, carefully selected to ensure maximum quality. Vinification takes place in red at a controlled temperature, with medium-length macerations that allow optimal extraction of colour and tannins. Frequent pumping over and delestage during fermentation ensure adequate oxygenation of the must. After fermentation, the wine is aged for two years, at least one of which in Slavonian and French oak barrels, acquiring complexity and aromatic depth. Garnet red in colour, enriched by ruby hues, the nose offers a complex and refined bouquet, with fragrances of small fruits, balsamic notes and hints of raspberry jam, rose and violet. In the mouth, it is dry, full and vigorous, with elegant tannin that envelops the palate. The combination of Nebbiolo and Merlot creates a harmonious and well-balanced profile, with a long finish. It goes well with rich, flavoursome dishes. Excellent with game and roast red meats. It also goes well with mature cheeses.

Sfursat 5 Stelle, Valtellina DOCG by Nino Negri, was born in the heart of Valtellina, precisely in Chiuro in the province of Sondrio. This area is characterised by a fascinating mountain landscape, with vineyards climbing the steep slopes of the Rhaetian Alps, thanks to historical terracing, built with dry stone walls. The climate here is unique, with cold winters and hot summers, mitigated by cool air currents from the mountains that create ideal conditions for growing Nebbiolo, here called Chiavennasca. The soil, rich in minerals, gives the wines an inimitable complexity and structure. After the harvest, the Nebbiolo grapes are placed in boxes, each containing a single layer of grapes for a maximum of 4 kg. These boxes are then transferred to the drying lofts, where the grapes wither naturally, losing about 30 per cent of their weight. This drying concentrates the sugars and aromas in the grapes, giving the wine greater intensity and complexity. Fermentation takes place at a controlled temperature, allowing the fruity and floral aromas of the Nebbiolo to be preserved. After fermentation, the wine is aged for several months before being bottled and put on the market. To the eye, Sfursat 5 Stelle presents a ruby colour of good intensity with violet reflections. On the nose, it opens with hints of violets, ripe red berry fruit, plums and sweet spices just hinted at. In the mouth, it is fresh, rich and full-bodied, with a robust structure and a lingering, savoury finish. A wine that can be enjoyed immediately, its structure and complexity give it excellent ageing potential. It can be kept for several years, during which it will develop further nuances and greater harmony. Perfect for accompanying rich and flavoursome dishes, it pairs beautifully with braised and roasted meats. It is also ideal with truffle preparations or well-aged Bitto cheese.

Cuvée, Spumante Metodo Classico Brut by Nino Negri, comes from the spectacular vineyards of Valtellina Superiore, located along the slopes of the Retiche Alps in the province of Sondrio. Here the vineyards, located at an altitude of between 300 and 550 metres above sea level, benefit from optimal exposure. The soils are rocky and the steep terraces are supported by dry stone walls. The climate, with warm, sunny summers and cold winters, accompanied by considerable daily temperature fluctuations, contributes to the grapes' aromatic complexity. This Cuvée is produced from predominantly white grape varieties, carefully selected to guarantee quality and finesse. Harvesting takes place in late summer, when the grapes have reached perfect ripeness. After manual harvesting, the grapes undergo soft pressing, followed by static decantation of the must. The clear must is then sent for fermentation at a controlled temperature. At the end of fermentation, the wine stays on the fine lees for at least six months, enriching itself with aromas and structure. In June, the wine is then bottle-fermented, followed by at least nine months of ageing on its lees. A fine, persistent perlage, the nose reveals a fine, well-expressed bouquet, with distinct fragrances of bread crust and pleasant hints of apple and green bay leaf. On the palate, it is dry, full, savoury and clean, with extraordinary elegance and a long persistence. Ideal as an aperitif, it is also perfect with delicate foods. It pairs well with fish dishes, seafood, carpaccio and tartare, as well as grilled vegetables and fresh cheeses.
