Between tradition and innovation. It is in this groove that Les Granits by M. Chapoutier, one of the highest expressions of the Saint-Joseph terroir in the Rhone Valley, fits perfectly. A historic appellation, famous for its extremely steep and difficult soils, the vineyards from which Les Granits comes are planted on steep and stony slopes, characterised by a very poor granitic soil. This soil is notoriously hostile and requires the vines to dig deep to survive. This results in grapes that are particularly concentrated and rich in mineral character. Les Granits is a single-vineyard cuvée, made from 100% Syrah grapes, selected from the oldest vines in the vineyard. Biodynamic viticulture is adopted in the vineyard, which ensures that each stage of cultivation and vinification is respectful of the environment and the natural rhythms of the plant, without the use of chemicals. Harvesting is done manually, ensuring that only the best bunches, picked at the point of perfect ripeness, are used. Fermentation takes place slowly in small cement vats, which maintain a constant temperature and allow delicate and precise maceration. Only the 'flower wine', the purest part of the juice, is used for this cuvée. Subsequently, Les Granits matures for about 14-18 months in barriques, new and used. Deep garnet red in colour, the nose is an explosion of complex, layered aromas. Initially there are notes of asphalt and mineral hints, a direct reflection of the mother rock from which the Syrah comes. As time passes, the bouquet opens up to reveal fragrances of blackcurrants, violets and spices, evolving into a symphony of scents. In the mouth, it is velvety and enveloping, with fine, precise tannins that add freshness and savouriness. The finish is long and persistent, with intense notes of black fruit, violets and a hint of smoke. An ideal companion for cured meats and red meats, it also accompanies rich and flavoursome dishes without any problems. Try it with roast beef, game and mature cheeses.

Tradition and nobility of Rhone viticulture. All this can be found in Le Pavillon, by M. Chapoutier, a wine that well represents the legendary appellation Hermitage and has received excellent reviews from critics halfway around the world. Hermitage is one of the most famous and prestigious appellations in the Rhone Valley. Situated on a hill overlooking the river, this region is known for its unique soils and an ideal microclimate for viticulture. The vines from which Le Pavillon comes are planted on a parcel of around 4 hectares, characterised by a soil rich in fine sediments on a granitic subsoil. The vines, which are between 90 and 100 years old, produce grapes of exceptional quality, thanks in part to their advanced age that guarantees a low yield but very high concentration. The grapes are harvested by hand at the limit of over-ripening. After harvesting, the bunches are completely destemmed and fermentation takes place in cement tanks, with temperatures not exceeding 32°C. Maceration lasts between 4 and 5 weeks and allows optimal extraction of the tannins, giving the wine its typical structure. For ageing, the producer chooses to use only oak barrels, with a percentage of new ones of 30%. This phase lasts 18 to 20 months. Before bottling, clarification takes place naturally, without mechanical intervention. Crimson in colour with garnet highlights, on the nose, notes of asphalt and graphite emerge, with subtle hints of cedar. In the mouth, it then reveals great complexity. The structure is powerful yet elegant, with well-polymerised tannins and a long, persistent finish. Depending on the vintage, Le Pavillon can age for an extraordinarily long period, ranging from 30 to 60 years, and in some exceptional vintages it can even last 50 to 75 years. Le Pavillon is a wine that goes well with rich, flavoursome dishes. It is ideal with red meats, game and mature cheeses.

This natural phenomenon allows the grapes to reach optimal ripeness. Grenache, an emblematic grape variety of the southern Rhône, is known for its ability to produce rich, opulent wines. In this case, the grapes are harvested by hand with rigorous selection to ensure that only the best bunches, at the perfect point of ripeness, reach the cellar for processing. Here, the grapes are completely destemmed and fermented in cement tanks. Fermentation lasts about three weeks, a period sufficient to allow the complete extraction of the tannins, which gives the wine its characteristic structure. The wine is then matured in vats for a period of 14-16 months. Deep red in colour, the nose reveals an explosion of black fruit aromas, with blackberry jam in evidence, accompanied by delicate notes of crushed strawberries and rose petals. In the mouth it is broad and enveloping, with soft tannins and a velvety texture. As the minutes pass, notes of ripe fruit and a touch of sweet spices emerge. Probably originating in Switzerland, over time it has also spread to some regions of France. Appreciated for its ability to produce fresh and aromatic wines, it is distinguished by notes of fruit and flowers that faithfully reflect the terroir from which it comes. In this case, the whole bunches are pressed to obtain a must fior fermentation. Maturation on the lees, with stirring of the lees every two months, lasts 8-9 months and adds complexity and body to the wine, without overpowering its fruity and floral aromas. Pale gold in colour with delicate green hues, on the nose the wine reveals a delicate bouquet of white flowers with subtle citric nuances. In the mouth it is fresh and 'thirst quenching', with a good balance between acidity and savouriness. Hermitage is one of France's most famous wine-growing areas, located on the left bank of the Rhône, where the vineyards stretch out on steep slopes that benefit from optimal exposure. It is from here that De L'Orée, proposed by M. Chapoutier, comes, a white, biodynamic, iconic wine that reflects the essence of the Rhone Valley's winemaking tradition. A pure expression of the Marsanne grape variety, the grapes destined for the production of De L'Orée come from the 'Les Murets' parcel, characterised by very old alluvial soils. This unique soil, rich in pebbles and coarse sand, provides excellent drainage and contributes to the concentration and aromatic complexity of the Marsanne grapes. De L'Orée is made exclusively from grapes from old vines, up to 60-70 years old. Mature vines, with naturally low yields, produce small but high-quality clusters, concentrating aromas and flavours. Harvested by hand, the grapes are gently pressed and the must is decanted cold for about 24 hours. This allows natural clarification and preserves the purity of the aromas. Afterwards, approximately 50% of the wine is fermented in large 600-litre wooden barrels, with regular btonnage to enrich the texture and add complexity. The remainder is vinified in steel tanks to maintain freshness. Ageing on the lees lasts between 10 and 12 months, during which the wine is regularly tasted to monitor its evolution and ensure its perfect balance. In the glass it presents itself with a luminous golden hue. The nose immediately reveals intense aromas of ripe yellow fruit, followed by delicate notes of toasted hazelnut and a hint of caramel. In the mouth it is full and enveloping, with a creamy texture and freshness well balanced by vibrant acidity. De L'Orée, like many of the labels from the M. Chapoutier, can be stored for decades. It pairs beautifully with foie gras, lobster, fish and white meats. But also goat and blue cheeses.
