A great red (really great) that comes from a land normally dedicated to the production of white wines. Impossible ‘ Not for Marchesi Antinori who, in the Umbrian estate of Castello della Sala, alongside the typical white grape varieties also cultivate the noblest of international reds, Pinot Noir. There are a total of 4 hectares of vineyards that run along the hillside, dividing into terraces and drawing sinuous, soft lines. The secret lies in the particular climate of the Castello, which initially forced the agronomists to devise a way to protect the grapes from the summer sun. The shoots, therefore, are stretched and folded over the plant so that the leaves can shade the grapes. A long and demanding job that, however, is amply repaid when one has the chance to uncork a bottle of this 'Antinori red'. Pinot Nero della Sala has a brilliant garnet red colour. The nose is delicate, with sensations of spices that combine with notes of violets, roses and aromas of small red fruits. In the mouth it is soft and savoury, with refined, silky, sweet tannins and a long, balanced finish. A wine that is ready immediately, it undoubtedly has great ageing potential.

The most beloved of aromatic grape varieties, Traminer, in a super fresh version offered by T ‘zk ‘ We are in Hungary, where the Antinori family owns this estate in the Bataapati area of the Tolna hills, 150 km south of Budapest. Processing of this white begins with careful selection of grapes in the field. Hand-harvesting only the best grapes and fast delivery to the winery to safeguard the finest and most delicate aromas as much as possible. In winemaking, reductive technology is adopted, that is, in the absence of oxygen, to obtain clearer and more delicate musts. After a quick 6-8 hour maceration on the skins, the must is fermented in a steel tank. Brilliant yellow in color, the nose reveals the elegance, finesse and intense aromaticity typical of the varietal, with notes of tropical fruits such as lychee, passion fruit and apricot and citrus nuances reminiscent of tangerine, grapefruit, and rose petals. A super rewarding white, it is perfect as an aperitif but also goes well with fish dishes, salads and white meats.

T ‘zk ‘ is part of the Antinori universe. We are in the heart of Hungary, a region that is as fascinating as it is little known, at least to many Italians, but from which very high quality wines come. The one offered here, for example, is a 100% Riesling, fresh and immediate, offered in the classic elongated bottle and corked (as is often the case in these cases) with a screw cap. Freshly harvested grapes are immediately transferred to the winery where they are carefully selected, destemmed and gently pressed. Alcoholic fermentation takes place in steel tanks at low temperature for about two weeks. Then the wine is aged, again in steel tanks, for a few months before being bottled. Straw yellow in color, it has a pleasant bouquet characterized by fresh notes of tropical fruits and citrus fruits, such as lime and lemon. Then notes of peach and floral undertones. In the mouth it is well balanced, endowed with the typical acidity due to the grape variety, and defined by good structure and a lingering finish. Light and fragrant, it pairs well with white meats, chicken, rabbit or pork, and delicately spiced dishes.

Another fine rosé signed by the Antinori family. We are talking about Furia di Calafuria, Salento IGT, proposed here by the Tormaresca winery. It comes from an unusual blend of Negroamaro, Cabernet Franc and Syrah grapes, all grown on the Maime Estate in the heart of Salento. The grapes, hand-picked and selected separately by variety, are destemmed and soft-pressed. The must obtained is cooled to obtain a natural clarification. It is then sent for fermentation in stainless steel tanks. Then, after a few months of ageing, again in stainless steel, in contact with its own yeasts, the various parcels are assembled to proceed to bottling. In the glass, Furia di Calafuria has a delicate pink, peach blossom colour. The nose is attractive, with notes of nectarine, pineapple and pink grapefruit accompanied by floral sensations of violet and lemon balm. In the mouth, however, it is pleasantly fresh, savoury and characterised by a pleasant citrus aftertaste. A versatile wine, it goes well with a wide variety of dishes. Perfect as an aperitif, it can also be served with hors d'oeuvres, fish or meat dishes and vegetarian dishes. For lovers of regional pairings, Furia di Calafuria goes well with burrata, for example. More generally, this wine goes well with sushi, sashimi and raw fish.

On the shores of the Tyrrhenian Sea, in the area south of Livorno, near the medieval village of Blogheri, white wine is almost a synonym of Vermentino. Guado al Tasso is the marvellous Bolgheri estate of Marchesi Antinori. Here, Sangiovese gives way, for once, to the great international grape varieties, originally from the Bordeaux area, namely Cabernet Sauvignon, Merlot, and Cabernet Franc. The particular climatic and soil conditions of the Tuscan coast, in fact, have proved to be particularly suitable for the production of wines produced in a "French" style and matured in small oak barrels. Guado al Tasso is the result of a careful selection, first in the vineyard and then in the cellar, of the grapes harvested at two different times. All this is to ensure that only perfectly ripe grapes reach the fermentation tanks. Each variety is vinified separately. Fermentation and maceration take place in temperature-controlled stainless steel tanks and, after racking, the wine is transferred directly into barriques, where malolactic fermentation takes place. Only in February of the year following the harvest are the best batches selected and blended into the final blend. At that point, the wine is transferred back into new French oak barriques where it continues to age until bottling. Guado al Tasso 2018 presents itself in the glass with a beautiful intense ruby red colour. The nose reveals attractive notes of sweet spices and small ripe dark fruits, liquorice root, leather and tobacco. In the mouth the quality of the tannins is very graceful: silky on the entry and vibrant on the finish. A wine characterised by great balance, pleasantness and harmony. Perfect with main courses of meat, it is a wine that is especially appreciated if the steak is cooked slowly on the grill.

Villa Antinori Chianti Classico DOCG Riserva, in fact, is one of the historic labels of the Antinori house, created in 1928 by Marquis Niccolò. A wine produced to be aged and improved over time, since then it has found its place in the most prestigious cellars of embassies, royal houses, grand hotels and restaurants. It is made from Sangiovese grapes, for once flanked by other complementary varieties. The grapes are first destemmed and then softly crushed, to initiate alcoholic fermentation and maceration that lasts for about 12 days. At the end of malolactic fermentation, the blend is made, which is then left to age in barrels until spring. Intense ruby red in colour, the nose has notes of small red fruits, currants and raspberries that blend well with notes of cherries and a slight woodiness. In the mouth it is harmonious and round. Very fresh and tannic, it has a very pleasant finish. It goes well with game dishes, but also (and perhaps above all) with the more classic bistecca alla fiorentina.

Cuvée Royale comes from a selection of the best Chardonnay, Pinot Noir and Pinot Blanc grapes of Tenuta Montenisa. We are in the heart of Franciacorta, around the Borgo di Calino, not far from Lake Iseo. The vineyards surrounding the villa, owned by the Maggi family, have been the heart of Marchese Antinori's production in this fine wine region since 1999. A wine characterised by great expressiveness and elegance, it is the result of super careful processing of the bases that are then assembled and bottled for the subsequent phase of re-fermentation in the bottle which, in the case of this Franciacorta DOCG, lasts for around 36 months. The long stay on the lees thus enhances its intense bouquet, with notes of white peach, bread crust and yeast. In the glass it has a pleasant pale straw yellow colour, with a creamy froth well supported by a fine and persistent perlage. In the mouth, however, it is above all well balanced but also characterised by an intriguing vivacity, typical of Brut. Served well chilled, between 7 and 9° C, it is the right glass with which to start a dinner with friends. Excellent with fish and shellfish dishes, it can also satisfactorily accompany vegetarian and white meat dishes.

We are in Franciacorta. In this land of great wines, vines have always been cultivated and the Antinori family owns a beautiful estate, where they produce classic DOCG wines, obtained by the method of re-fermentation in the bottle. The estate is called Montenisa and is located right in the heart of Franciacorta, near the Borgo di Calino. Marchese Antinori Blanc de Blancs is made from the best Chardonnay grapes, to which a small percentage of Pinot Blanc is sometimes added to obtain an elegant cuvée with refined freshness. The flower must is fermented in stainless steel tanks. Once the base wine has been made, the cuvée is bottled for the subsequent prise de mousse, which lasts no less than 24 months. Pale yellow in colour, this Franciacorta DOCG presents itself in the glass covered with a beautiful creamy froth, supported by a fine and persistent perlage. The nose is fragrant and immediate, with floral and fruit notes reminiscent of apple and white-fleshed peach. In the mouth, on the other hand, it is noted for its beautiful liveliness and freshness, accompanied by good balance and distinct elegance. Starters and aperitifs are ideal drinking moments. But thanks to the subtlety of its aromas and the restrained dosage, it is a bottle that also lends itself well to being placed on the table to accompany all-fish lunches and dinners.
