Ringberg Castle, built by the Habsburg dynasty in 1620, towers over Lake Kaltern and is surrounded by the undulating greenery of its vineyards. Its "vineyard" represents an additional geographical mention. A single vineyard, strictly defined and limited. Special geological characteristics, combined with a breezy microclimate, result in mineral wines of great elegance and refinement. Like this Sauvignon, proposed by Elena Walch, partly fermented in steel tanks and partly in barriques and large oak casks. Awarded by the strictest wine critics, this mountain white wine has a beautiful bright yellow colour with slightly green reflections. The nose is delicate and inviting, with a bouquet characterised by floral and alpine herb notes and a hint of ripe gooseberries. On the palate it is complex and fruity, beautifully structured and extremely elegant and mineral. A simply incredible wine in terms of richness and character. A white wine to pair with important meat or fish dishes. Excellent with seafood and shellfish, it also goes well with freshwater fish.

It is the most fascinating tradition in Tuscany. We are obviously talking about Vinsanto, which cannot be missing from the range of wines of a historic winery such as Conti Guicciardini. In this case, the 'Vinsantaia' is housed in the main tower of the castle, and is a unique and fascinating feature. It is here that the prized Malvasia-based Vinsanto, after drying the grapes on mats, slowly matures in ancient chestnut and oak barrels. The withering lasts for about three months, between September and November, while for the delicate phase of maturation in wood, the wine stays in the traditional barrels for 3 to 4 years, until the residual sugar is almost completely fermented. It is a very traditional Vinsanto, characterised by a dry structure and a well-balanced taste. An excellent dessert wine, if during lunch or dinner Chianti and grilled steak were the protagonists, the 'de rigueur' closure is with a small glass of this delicious raisin wine. Good with traditional almond cantucci but also with simple desserts such as fruit tart.

Dominated by the ancient tower and the small medieval village, Tenuta CastelGiocondo is located south-west of Montalcino. We are at an altitude of about 300 metres, an ideal place for the production of Sangiovese. But not only. In fact, Lamberto Frescobaldi writes: "Animated by the courage that every person who wants to undertake a venture has, in the 1970s we planted the first Merlot vines on an unusual clay soil. An important challenge that led to the birth, in 1991, of Lamaione, a lone, powerful and proud knight in the Montalcino panorama. The grapes are carefully selected and harvested by hand in boxes. Once in the cellar, destemming is followed by manual sorting of the grapes. While fermentation takes place in temperature-controlled steel tanks. Then, at the end of vinification, the wine is aged for about two years in at least 80% new French oak barriques. Then, after bottling, follows a further 12 months of ageing in the bottle. Powerful and rich, Lamaione has an intense, impenetrable ruby red colour. On the nose, wonderful scents of cherry jam and plum, with intriguing hints of rhubarb, graphite, dark chocolate, liquorice and roasted coffee. In the mouth, it is warm, soft and round, with a fine, dense yet silky tannic texture.
