There is no wine-growing area in Italy more appreciated and sought after by wine enthusiasts from all over the world. We are obviously talking about the hills of Montalcino. And it is precisely here that the Brunello di Montalcino DOCG by Azienda Agricola Capanna was born. This area is characterised by a unique microclimate, with mild winters and hot, dry summers, ideal for growing vines. The hilly vineyards range from 250 to 400 metres above sea level, on soils composed of marl, clay and limestone, capable of giving the reds extraordinary complexity and minerality. A pure Sangiovese, as prescribed by the strict specifications, this Brunello is made exclusively from grapes from the estate's oldest vineyards, where the vines produce superior quality grapes with a unique concentration of aromas and tannins. Alcoholic fermentation and maceration of the skins for a period of 25-30 days at a controlled temperature, in large conical Slavonian oak vats. Then, after racking, the wine undergoes spontaneous malolactic fermentation that softens the acids and enriches it in terms of complexity. This is followed by a long period of ageing in Slavonian oak casks, with a capacity ranging from 10 to 32 hectolitres, for a period of approximately 34-38 months. This long ageing allows the wine to develop structure and complexity. Finally, once bottled, the Brunello rests for at least a further 6 months before being put on the market. Intense ruby colour with garnet hues, the nose reveals an ethereal and complex bouquet, with persistent notes of red fruit and vanilla. In the mouth it is perfectly harmonious, with good tannicity and the right structure. The long persistence makes it a wine of great elegance and depth. It goes well with red meats, game and mature cheeses. Its tannic structure and aromatic complexity make it ideal for rich and flavoursome dishes.
