This is not simply a wine from Eugenio Collavini's cellar. This is the very symbol of the Friuli winery. It is the product that has inspired many winemakers, in the hope of finding a valid "territorial" alternative to Prosecco. It is made from pure Ribolla Gialla grapes, carefully selected to preserve aromaticity and freshness, but above all transformed with the so-called "Metodo Collavini". After an initial fermentation, partly in steel and partly in barriques, the base wine is re-fermented in large horizontal autoclaves. At the end of this second fermentation, however, the wine is not immediately bottled but continues with a phase of maturation "sur lie", i.e. on its own noble lees, for a period of "never less than 30 lunar cycles". At that point, at least another 12 months in the bottle are required to complete the long ageing process. Excellent as an aperitif, Ribolla Brut is extremely versatile and suitable for a thousand occasions. Also for the whole meal, properly paired with delicate fish or shellfish dishes.

Tuscany, Montalcino hill. It is here that the Sangiovese grapes, cultivated on soils rich in limestone, clay and schist, reach their qualitative apex. It is not by chance that Brunello di Montalcino DOCG, the world's best-loved Italian red wine, is born here. In this area, the Piccini family conducts vineyards at about 350 metres above sea level. A little corner of paradise where the breezes from the sea help to mitigate the summer heat. The constant movement of air also reduces the humidity level in the vineyards, sheltering the grapes from common fungal diseases. Having reached their ideal ripening point, the grapes are harvested by hand and scrupulously selected. Vinification takes place at a controlled temperature followed by a long maceration on the skins. Once this phase is over, the delicate maturation in the cellar begins. This is a process that lasts for about 5 years, of which at least 36 months in oak barrels. The result is a very classy red, characterised by aromas of dried fruit, sultanas and cane sugar. In the mouth it is full-bodied, with ripe tannins and intense notes of chocolate, coffee and more dried fruit on the finish. A great wine for ageing, it is good today but can safely age for a long time in the cellar. At the table it goes well with roasts, game and mature cheeses.

A rosé bubble that is sure not to leave the many (many) fans of the type indifferent. We are talking about Charpentier's Rosé Réserve Brut Champagne. Pleasantly organic bubble that comes from the largest region of Champagne. We are obviously talking about the Vallée de la Marne and to be precise from the village of Villers-sous-Chatillon. Pinot Noir for the very large part (about 80%) and Pinot Meunier for the remainder, vinification begins with an initial alcoholic fermentation in thermoregulated vats, followed by malolactic fermentation and subsequent blending with reserve wines. To achieve the rosé color, a small percentage of red wine, no more than 11 percent, is also added to the blend in this house. Red wine, in all cases, is also vinified by the winery, using Pinot Meunier and Pinot Noir harvested from old vineyards over 50 years old. After bottling, the aging phase on the lees continues for about 30 to 36 months. In the glass, we discover a wine characterized by a beautiful coppery rose gold color, almost salmon, with fine, nervous and persistent bubbles. The nose is promising and fruity, with fresh fruit notes reminiscent of black currant, quince and fresh flowers. In the mouth, then, sharp hints of red fruits, cherry and black currant, good body and character. A Champagne with a pleasantly gastronomic taste, this Rosé does not struggle to equally accompany fish and meat dishes.

Nerello Mascalese (70%) and Nerello Cappuccio (30%), these two indigenous grape varieties are perfectly adapted to the volcanic soil and climate conditions. Nerello Mascalese, in particular, gives the wine structure, body and tannins, while Nerello Cappuccio brings freshness, acidity and fruity notes. Vinification is carried out with respect for the grapes and begins with crushing and destemming. The must obtained remains in contact with the skins to acquire the right colour. Fermentation and soft pressing follow. The wine then undergoes what is known as malolactic fermentation and continues its maturation in steel, in contact with its fine lees until the end of November. It is then transferred to wooden barrels for the final stage of maturation. In the glass, one discovers a wine characterised by a beautiful intense ruby red colour with garnet hues. Kerner is a cross of Schiava and Riesling, born in Weinsberg, Germany, around 1930. The must is then separated from the residues through natural precipitation and then left to ferment at a controlled temperature. It has been there for fifty years, reminding everyone that when things are done with passion, no matter how big or small, the results come. Founded in 1937, it is the oldest cooperative in Tuscany and certainly the largest in the area. Founded on the initiative of fourteen producers, today it counts on the collaboration of about 400 members united by a great passion and a common goal: To guarantee quality products at an affordable price. With respect for tradition and the environment, of course. They do it on a grand scale, as they can count on over 1,000 hectares of vineyards, not only in Tuscany. If it is not Brunallo, in Montalcino, it is certainly Rosso (di Montalcino). A 'baby Brunello' that is capable of giving great satisfaction, without requiring too onerous an outlay. A fine example is this Rosso di Montalcino DOC from Azienda Agricola Capanna, produced with grapes from the company's youngest vineyards, located at an altitude between 250 and 300 metres above sea level. Made exclusively from Sangiovese grapes, the vines are cultivated on predominantly clayey and skeleton-rich soils, benefiting from ideal climatic conditions. The vinification of Rosso di Montalcino DOC also follows a traditional and careful process. Alcoholic fermentation and maceration of the skins for a period of 18-20 days at a controlled temperature, in large conical Slavonian oak vats. Spontaneous malolactic fermentation and, above all, long ageing in Slavonian oak casks of varying capacity from 20 to 32 hectolitres for a period of 6-10 months. Then, once bottled, the Rosso di Montalcino rests for at least another 3-4 months before being put on the market. The result ‘ A beautiful intense ruby colour, with fresh and lively aromas. Notes of red fruit and vanilla that anticipate a satisfying sip. Good structure, slightly tannic, and with just the right persistence. All this makes Rosso di Montalcino a versatile and easy to appreciate wine. It pairs well with pasta dishes with meat sauce, roast white and red meats, mushrooms, cured meats and cheeses.

Foss Marai loves to amaze. This is a fact. And in this case the surprise comes from the fact that Roös, although a sparkling wine, is not made from the classic vines of the region. Roös, in fact, is an elegant rosé that comes from Masseria la Sorba, the winery's Apulian property, where Foss Marai has undertaken a long process of rediscovery and enhancement of ancient native grape varieties that are no longer in use but are of high quality. With a colour reminiscent of rose petals and reflections between ruby and pomegranate, this sparkling wine surprises with a lively and complex bouquet. It is easy to perceive right away the rich array of berries, with a predominance of blueberries and cherries. In the mouth it is initially round and warm, before becoming fragrant and refreshing. Excellent with the whole meal, it is a bubble that is not afraid of combinations of a certain depth. Excellent with fish, it also accompanies meat-based dishes that are not overly structured. To enjoy it to the fullest, however, let's not forget to add some slices of salami or medium-aged cheeses to our table.

We do not know what inspired Borgogno's marketing manager to come up with such an unusual name. "No Name", in fact, is the commercial name that appears on the iconic label of this Langhe Nebbiolo DOC. A clean, white label in the style of the historic Piedmontese winery, with the name (or rather the NO NAME) written in big letters right in the middle. And a small "protest label" written in the bottom corner. Protest or not, this Nebbiolo DOC from Borgogno is certainly not a wine of little interest. Harvested by hand, spontaneously fermented in cement tanks, lightly pressed and matured for three years in large oak barrels. Nothing is left to chance. In fact, there are no protests about quality! Or rather, it is not discussed. Ruby red colour with violet reflections. The nose is persistent, ethereal, with hints of flowers such as roses and violets and fresh fruit. Then spices. In the mouth it is dry, harmonious, velvety, full-bodied, austere and generous. As always in these cases, the perfect pairing calls for the great classics of Piedmontese cuisine, such as game and braised meats. After all, this is a wine with a great structure. Without protest!
