When the games get serious, The Emperor steps in. Colli Orientali del Friuli DOC, Ribolla Gialla in purity, from a vineyard that is about 20 years old. The grapes are harvested by hand, only when it is certain that they have actually reached full maturity. Delivered to the winery, they are not immediately processed but are left in the press for at least 24 hours, with cold maceration. Only then are they softly pressed and the must fermented in steel tanks at a controlled temperature. Afterwards the wine is put into second passage French tonneaux, where it will rest for the next 10 months, during which frequent battonage is carried out. This is followed by the blending of all the barrels and, finally, the bottling. The result is a glass characterized by a very intense golden yellow colour, with aromas of citrus and flowers, where the scent of acacia stands out. All this is well integrated with elegant notes deriving from the wise use of wood. In the mouth it is fresh but full-bodied. Good structure and very long persistence.

The nose has intense aromas reminiscent of bread crust, ripe fruit and a slight hint of almond. In the mouth, however, it is full and enveloping, soft and harmonious. There is nothing more Friulian than a nice glass of Schioppetino. When the wine in question is produced by Ronco dei Pini and the hand is that of Claudio Novello, then things get even more interesting. In fact, it start by being harvested by hand, quickly brought to the winery and vinified in steel at a controlled temperature. This is followed by the classic malolactic conversion that makes the wine slightly rounder and helps to smooth out its sharpest edges, and an ageing in French oak barriques that lasts for over a year and a half. Only at that point the wine is blended and, after a period of about 3 months of rest in tanks, it is sent to the bottling phase. The main grape variety of the Judrio Valley, the natural border between Italy and Slovenia, it has a reassuringly intense ruby red colour in the glass. The nose is assertive and aromatic, with notes of berries, currants and plums that meet cinnamon, pepper, liquorice and leather. In the mouth it is intense and full, fresh and velvety. An extremely harmonious wine, endowed with a long olfactory persistence.
