When the games get serious, The Emperor steps in. Colli Orientali del Friuli DOC, Ribolla Gialla in purity, from a vineyard that is about 20 years old. The grapes are harvested by hand, only when it is certain that they have actually reached full maturity. Delivered to the winery, they are not immediately processed but are left in the press for at least 24 hours, with cold maceration. Only then are they softly pressed and the must fermented in steel tanks at a controlled temperature. Afterwards the wine is put into second passage French tonneaux, where it will rest for the next 10 months, during which frequent battonage is carried out. This is followed by the blending of all the barrels and, finally, the bottling. The result is a glass characterized by a very intense golden yellow colour, with aromas of citrus and flowers, where the scent of acacia stands out. All this is well integrated with elegant notes deriving from the wise use of wood. In the mouth it is fresh but full-bodied. Good structure and very long persistence.

It is made by soft pressing and subsequent fermentation in an autoclave, which is stopped when the internal pressure reaches 2.5 bar. The result is a wine characterised by a beautiful straw yellow colour with greenish reflections and a barely present perlage. On the nose it is easy to distinguish the typical notes of rennet apple, pear and lime. On the palate, however, one discovers a pleasantly aromatic, fresh and slightly savoury wine. A harmonious wine, with a good balance between all its components, although slightly "unbalanced" towards softness. It is the aperitif wine par excellence. Ideal with the traditional cheese and sliced meats, it also goes well with light fish dishes.

Proposed in the Brut version, therefore pleasantly dry, it is the ideal wine for those who want just one bottle from starter to main course. Perfect with fish hors d'oeuvres, it also goes well with white meats and shrimp or vegetable tempura.

A single plot over 40 years old, where sustainable and environmentally friendly viticulture is practised, with the aim of preserving the integrity of the fruit and the expression of the terroir. The decision to use only Chardonnay grapes for this Champagne allows the characteristics of this noble grape variety to be enhanced. The result is a wine of brilliant straw yellow colour, with a fine and persistent perlage. The nose reveals aromas of citrus fruits, white-fleshed fruit, white flowers and mineral notes. The taste is fresh and vibrant, with a nice acidity accompanying a persistent, mineral finish. The zero dosage is then a stylistic choice that allows the minerality of the terroir and the authenticity of the wine to be enhanced. A beautiful reality in Margaux, Chteau Ferrière is a historic winery in the appellation, but it is modern in concept and in step with the times. The proposed red wine comes from a parcel vinification. 70% Cabernet Sauvignon, 25% Merlot and 5% Petit Verdot. The grapes are selectively harvested at full ripeness and kept separate throughout the production cycle. Alcoholic fermentation is triggered by the action of natural yeasts and is accompanied by daily pumping over to ensure gentle extraction. Maceration continues for about 3 weeks and, at the end of processing, after racking and malolactic conversion, the wine is transferred to barriques for its maturation period. At least 18 months, during which the mass is divided into three parts. Forty per cent is passed into new barriques, 40 per cent is left to mature for individual varieties and the remaining 20 per cent matures in ovoid vats and amphorae. The final blending takes place only shortly before bottling. A red of great personality, this Margaux presents itself in the glass with a beautiful bright red colour and compactness. The nose is reminiscent of blackberries, blackcurrants, violets, bitter chocolate, clay and mineral. Medium-bodied, in the mouth it reveals very fine and well-integrated tannins, a nice structure, well balanced by a clear sensation of softness. This Margaux seduces enthusiasts and experts alike with its freshness and great elegance.

This Vino de la Tierra de Murcia, the step below the DO, Spanish designation of origin, comes from the municipality of Jumilla. It is a wine made from 100% Garnacha grapes. A very particular Garnacha, however, in perfect "Mediterranean style," as Casa Rojo's Wine Gurus like to say. In Enemigo Mío, in fact, the freshness and full aromatic potential of this grape variety is sought through careful processing, in the vineyard and in the cellar. In August, therefore, green pruning is carried out to minimize the vigor of the vine and thus adjust production to the desired concentration. The subsequent harvest is done by hand, in small 12-pound crates to best preserve the health of the grapes during transport to the winery. Then double sorting and destemming are carried out. Enemigo Mío is fermented in 4 different 11,000-liter French oak vats, and following racking in January, it is immediately bottled and launched on the market after only 3 months. In the glass, a beautiful red characterized by a not very intense color is revealed. The nose reveals a rich bouquet, characterized by beautiful wild red fruits, cherries, blueberries and hints of caramel. Then subtle aromas of spices, cocoa and nuts, due to the passage in oak "fudres." In the mouth, it is elegant, fruity, fleshy, round and fresh. Truly an amazing wine. One to try!

Brilliant ruby red in colour, its bouquet evokes inviting scents of ripe red berries such as cherry, black cherry and floral notes of dog rose. A very pleasant wine that goes well with cheeses and cured meats, but also with delicate meat dishes.

Classic red vinification and refinement in stainless steel give life to a wine characterised by a beautiful intense ruby red colour with purple hues. On the nose the scents are those of underbrush and jam, while in the mouth it is full, with notes of black cherry that lead to an intriguing closure with particular blood notes. A strongly territorial red wine that requires a typical pairing. Excellent, for example, with polenta with cheese or a classic savoury soup.

Malvasia delle Lipari 95% and Corinto Nero 5%, the grapes are harvested by hand after the start of a slow drying phase on the vine. The healthiest bunches are then placed on 'Cannizzi' under the Sicilian sun for about 15 to 20 days, waiting for the water contained in the grapes to evaporate naturally, leading to a concentration of sugars and aromas. Only then are the grapes ready for the subsequent vinification. An initial skin contact is made, followed by traditional vinification at a controlled temperature. At the end of the transformation, the wine is stored in temperature-controlled steel tanks until bottling. At that point, the wine rests for a further 6 months in the bottle, before being put on the market. In the glass it appears a beautiful amber colour, with vivid highlights. Brilliant and transparent, it reveals an excellent consistency, with tight bows. The nose is imposing and graceful at the same time. Broad and very fine, with fruity hints of dried figs, dates and ripe apricots. Then honey and sweet spices. In the mouth, however, it reveals a velvety softness. Sweet but never cloying, it is well balanced thanks also to the great savouriness. Excellent with almond paste desserts, Sicilian cassata and small pastries. Try it also with spicy pecorino cheese and orange honey.
