Produced by the renowned Casa Rojo winery, Alexander VS The Ham Factory is a red wine of great character and elegance. Made from 100% Tinto Fino grapes from vineyards over 60 years old in the municipalities of La Horra and Hontoria de Valdearados. We are located at an average altitude of between 850 and 900 metres in the province of Burgos. An extreme continental climate, with large temperature ranges and a clay-limestone soil, here the Tinto Fino gives grapes of great concentration and aromatic richness. Vinification takes place in accordance with tradition, with fermentation in stainless steel at a controlled temperature and subsequent ageing in French oak barrels for 20 months. In addition, 10% of the mass undergoes malolactic fermentation in barrels, giving the wine greater smoothness and harmony. In the Alexander VS The Ham Factory glass, it has an intense garnet red colour. The nose reveals a complex and fascinating bouquet, with notes of ripe black fruits, such as blackberry and blueberry, interwoven with hints of spices, leather and sweet tobacco from the ageing in wood. In the mouth it conquers with its elegance and beautiful structure. Intense aromas of ripe fruit are accompanied by balsamic and spicy notes. The tannins, although present, are well integrated and give the wine a persistent and refined finish. Casa Rojo amazes. Always. And it does so with its fun and illustrated labels, but above all it does so with the unquestionable quality of its traditional Spanish wines. In this case with Tintafina we go to the prized Ribera del Duero DO. Here the reds, characterized by a strong Mediterranean character, are made from 100 percent Tempranillo grapes, often from old vines rooted in soils that are poor in substance and therefore capable of yielding clusters of beautiful concentration. Tintafina, in particular, matures for about a year in French oak barrels after vinification, gaining complexity and depth. A deep cherry-colored red with beautiful purplish reflections, this "caliente" tinto wine is capable of saturating the whole room when uncorked with its aroma. Aromas of berries, red fruits, vanilla and spices. All very powerful and intense. But at the same time also elegant. Trepat is a grape variety originating in the Spanish region of Catalonia, and more specifically in the Conca de Barberì area in the province of Tarragona. Its name is believed to derive from the Catalan word 'trépate', meaning to climb or climb, in reference to the particular bearing of the ripe bunches on the plant. A red grape variety, it is mainly used to produce dry red wines. In this case, however, Casa Rojo uses it as the basis for a Cava sparkling wine. It starts with a manual harvest in the first week of September, when the grapes have reached an optimal degree of ripeness. In the cellar, there is a quick 2-hour maceration on the skins, which allows sufficient extraction of aromas and colour. This is followed by soft pressing and fermentation, carried out in this case in stainless steel tanks at a low temperature. Secondary fermentation takes place in the bottle, according to the Metodo Classico. Pale pink colour with brilliant golden reflections, the bubble is delicate and small. Aromas of good intensity, with aromas of small red fruits combined with citrus fruits, butter and delicate pastry notes. On the palate it is fruity and creamy, with hints of liquorice and a good acidity that gives it a fresh and persistent finish. The black sheep of bubbles! Limited production.

This red wine is made from the grapes of a single 80-year-old vineyard of unknown varieties. The vineyard in question is located on the right side of the road bordering DO Jumilla and DO Alicante and thus, for years, considered table grapes, underpaid and mistreated. Locals call them "The Bastard Vineyards." It took the creativity of Casa Rojo's Wine Gurus to decide that those grapes deserved, after years of neglect, to be enhanced. That is why they decided to select and harvest those vineyards, producing this unique wine. Harvested by hand in the second half of September, the clusters undergo double selection on arrival at the winery, followed by destemming. Fermentation in temperature-controlled stainless steel tanks, after malolactic fermentation, the wine ages in new French oak barrels for 6 months. An attractive ruby red color, this wine is fresh and balsamic on the nose, highlighting notes of ripe black fruit and fine leather details from its passage in wood. This Vino de la Tierra de Murcia, the step below the DO, Spanish designation of origin, comes from the municipality of Jumilla. It is a wine made from 100% Garnacha grapes. A very particular Garnacha, however, in perfect "Mediterranean style," as Casa Rojo's Wine Gurus like to say. In Enemigo Mío, in fact, the freshness and full aromatic potential of this grape variety is sought through careful processing, in the vineyard and in the cellar. In August, therefore, green pruning is carried out to minimize the vigor of the vine and thus adjust production to the desired concentration. The subsequent harvest is done by hand, in small 12-pound crates to best preserve the health of the grapes during transport to the winery. Then double sorting and destemming are carried out. Enemigo Mío is fermented in 4 different 11,000-liter French oak vats, and following racking in January, it is immediately bottled and launched on the market after only 3 months. In the glass, a beautiful red characterized by a not very intense color is revealed. The nose reveals a rich bouquet, characterized by beautiful wild red fruits, cherries, blueberries and hints of caramel. Then subtle aromas of spices, cocoa and nuts, due to the passage in oak "fudres." In the mouth, it is elegant, fruity, fleshy, round and fresh. Truly an amazing wine. One to try!

Gabacha is a 100% Sauvignon Blanc. But not the classic aromatic white. Starting with vineyards that are between 20 and 30 years old, and located at an elevation of about 750 meters above sea level. A place more unique than rare, with a very special microclimate. The grapes are harvested by machine, overnight, to ensure that the heat does not go to ruin such valuable raw material in any way. After harvesting, then, the grapes are macerated briefly to cold extract all the aromas and flavors of the berries. Then, for the next stage of fermentation, only free-run must is used, and at the end the wine is aged for no less than three months on its own yeasts. Straw yellow color, clean and transparent, the nose is an explosion of aromas, with great intensity. Tropical notes, such as mango and pineapple, accompanied by subtle hints of citrus and plant aromas characteristic of the variety. In the mouth, it is ample, fresh, with intense acidity that is perfectly balanced with subtle residual sweetness. A complex and intense white, it requires a rich pairing in terms of flavor. For lovers of Cantabrian anchovies, for example, this is the right bottle to experience.
