Amidst the hills of Collio Goriziano, surrounded by a breathtaking panorama, comes the Sauvignon Ronco delle Mele, one of the most representative crus of the Venica & Venica winery. Born from the 'Spirito del Luogo' project, this white wine embodies the essence of the territory and the family's production philosophy. The Ronco delle Mele vineyard is located within the DOC Collio area, at an altitude of approximately 150 metres above sea level. Its privileged position, oriented towards the Julian Alps with a view of the Canin glacier, provides a unique microclimate, characterised by wide temperature ranges and a constant breeze coming from the north. The Sauvignon grapes, harvested at different times to respect the different sun exposures and microclimates created by the rows and woods, are vinified with great care. After harvesting, the grapes undergo maceration for about 20 hours at a controlled temperature. Vinification takes place in oxygen-protected containers with innovative systems for recycling the carbon dioxide from fermentation, to limit the intake of antioxidants and preserve aromatic freshness. At the end of processing, approximately 20% of the wine matures for a variable period in large 20/27 hectolitre wooden barrels, while the remainder matures in steel containers. This refinement gives the wine complexity and structure, while maintaining its freshness and vitality. A dazzling greenish yellow, the nose captivates with a complex and intriguing bouquet, with elegant vegetal notes of tomato leaf, green pepper and grapefruit intertwined with mineral hints typical of the terroir. In the mouth, it seduces with its elegance and aromaticity, perfectly balanced by a lively freshness and mineral savouriness. The vegetal notes perceived on the nose are amplified in a persistent and satisfying finish. A wine with a great capacity for ageing, thanks to its structure it can mature for more than 10 years, evolving over time and offering new aromatic nuances. Perfect with shellfish and goat's cheese.
