Assemblage 1 Rosé comes from a blend of Chardonnay for 60% and Pinot Noir for the remainder. High-quality grapes from 26 selected vineyards whose vines have an average age of around 28 years. Harvesting, as is customary for the winery, is done by hand. The grapes are harvested in small 13 kg crates to preserve their integrity and once in the cellar are immediately sent for processing. Only the flower must, obtained from the first pressing, is used for this cuvée. Part of the wine, approximately 23%, is aged in oak barrels, adding complexity and depth. After the creation of the cuvée, the wine then rests on the lees for 30 months, acquiring a fine and persistent perlage. In the glass, it has an antique pink colour, brilliant and luminous. The perlage is fine and refined, anticipating a creamy texture. The nose immediately reveals elegant aromas of orange blossom and candied citrus fruits. In the mouth, it is fresh and fragrant, with a perfect balance between acidity and minerality. The finish is long and crystalline. Alma Assemblage 1 Non Dosato comes from a careful selection of Chardonnay (76%) and Pinot Noir (24%) grapes, from 30 vineyards distributed among the best parcels of Franciacorta. The vineyards, with an average age of 27-28 years, yield clusters that express a profound aromatic maturity. Harvested strictly by hand, the bunches are collected in small 13 kg crates to preserve their integrity. The flower must, obtained by soft pressing, is the heart of the cuvée. A portion of the wine (31%) matures in wooden pièces to add structure and elegance. After bottling and prise de mousse, the wine matures for at least 30 months on the lees, developing complexity and depth. Finally, the 'zero dosage' enhances its purity, letting the natural characteristics of the grapes and terroir do the talking. In the glass, it has a brilliant yellow colour, enhanced by a fine and persistent perlage. On the nose, a citrus and floral bouquet, with touches of sweet spices, thyme and a fresh Mediterranean note. The palate is assertive, dynamic, with a vibrant freshness interwoven with a complex, crisp structure. The finish is long, elegant, perfectly balanced between maturity and vivacity. Good already, this Franciacorta DOCG, thanks to its structure and long ageing, also reveals excellent ageing potential. It can certainly evolve for at least 5-7 years, enriching itself with more complex tertiary notes. When it is uncorked, however, we will discover a great wine for the whole meal. Perfect with refined aperitifs or raw fish dishes, Alma Assemblage 1 Non Dosato also expresses itself magnificently with delicate first courses and soft cheeses.
